Sweet Corn Risotto

Description

Sweet corn Risotto is an authentic Italian gourmet dish which is creamy and delicious just like a celebration dish. It is gooey and crunchy at the same time  This vegetarian version of rice preparation is studded with corn kernels and Italian herbs are used to enhance the flavours.  Its a wholesome protein packed meal to satiate the hunger pangs during the warm summer evenings.

Ingredients

Serves : 2
  • 1 cup American sweet Corns


  • 1 cup Good quality Rice


  • Extra Virgin Olive oil – 2 tablespoons


  • Garlic – 10-12 cloves (chopped)


  • Onion – 1 cup (chopped)


  • Vegetable Stock 4 cups( prepared by boiling onion,cauliflower, potato, peas,carrot and then strained)


  • 1/2 teaspoon salt or to taste


  • 1/2 teaspoon Black pepper powder


  • 1/2 cup nutrela mini chunks soaked in warm water (optional)


  • 1 cup mix vegetables like carrots, spring onion greens finely chopped


  • 1/2 cup Cheese grated


  • 1 tablespoon grated cheese for the garnish.

Directions

  • Heat 1 tablespoon olive oil in a pan and add half of the garlic and fry till golden brown.
  • Add half of onion and cook for one minute.
  • Add corns, nutrela chunks, salt, and 1/4 teaspoon black pepper powder
  • Cook on medium heat till tender.
  • Remove from heat and keep aside.
  • Add the remaining olive oil in a pan and add the remaining garlic and fry till golden brown.
  • Add the remaining onion and cook for 2-3 minutes.
  • Add the rice and mix well to coat the rice in oil.
  • Add water and vegetable stock and cook for around 15 minutes or till all of it is absorbed by the rice.
  • Check if the rice is done and if not, add little water and cook till done.
  • Add the shredded cheese and and mix well.
  • Transfer the risotto into a serving bowl.
  • Top with the cooked corns, spring onion greens and cheese to garnish.
  • Serve hot with some stir fried veggies tossed in hot and sour sauce
